Gajar Ka Halwa is a traditional Indian dessert and is present in the menus of most Indian Restaurants all across the world. It is made with varied ingredients by different people in different places to achieve the same result. It could be made super-sweet and super-rich or tweaked to suit your palate. Regardless of the ingredients, it's delicate flavor and soft texture will definitely carve a niche in your hearts.
This is the first time I have made it in many years and I am so happy to share the recipe with you just so that you may enjoy it as much as we did.
Grated Carrots-4 cups
Sugar- to taste
Clarified butter-2-3 tbs
Cardamom powder-1 tsp
Coarsely ground pistachios-1 tbs to garnish
1. Heat clarified butter in a pot and add the grated carrots along with the cardamom powder to it and give it a quick stir, reduce the heat and cook with the lid on until they become soft.
2. Add sugar and and milk and cook on high heat while stirring until all the milk dries up and you see a glossy shine on the cooked carrots and the mixture becomes thicker.
3. Turn the stove off and transfer to a serving plate and garnish with ground pistachios and serve hot.
