Zucchini Pancakes

Zucchini is a very delicate vegetable, somewhere in between cucumbers and squash. It has a delicate flavor and can be cooked very quickly. Zucchini pancakes can be served as a snack on a rainy day, with a cup of tea or can quickly be put together and made when you have the vegetable and unexpected guests:) this is an adapted recipe from www.chasingchildrenandrecipes.blogspot.com. However, I have made my own additions to it.

Ingredients:

Zucchini-2, washed, peeled and grated with skin on
Salt-to taste
Eggs-2
Onion-2 tbs, grated
Green pepper-2, finely chopped
Cilantro-2tbs, chopped
Oil- enough for pan frying the pancakes

Method: Put the grated zucchini is colander and let all the juice drain. In a bowl, add rest of the ingredients except the oil and mix well. Add the grated zucchini to it and mix once again until the whole mixture comes together. Heat a pan or a skillet. Pour a tbs of oil and put a tbs full of mixture and let it take it's own shape. Cook on hight medium heat until you they start turning golden brown othe bottom. Flip the and cook until the other side turns brown too. Remove onto a serving plate and serve with tomato ketchup. Enjoy!
