Savoury Besan (garbanzo flour) Cake

Bismillahir Rahmanir Raheem

As a little girl and an only daughter, I was Mom's little helper for a long time. I helped her plan, prepare  and get the ingredients ready and she did the cooking, for the most part. And, today I did the same, was Mommy's little helper and the result was one perfect, mouth-watering, finger-licking, savoury cake that can be eaten by itself or served on the side with any regular vegetarian meal. This cake is by no means, like the dhokla, another delicious Gujarati delicacy.

garbanzo flour-2 cups
lemon juice-4 tbs
asafoetida-1/2 tsp
ginger-garlic paste-1/2 tsp
water-2 cups, divided

to be ground...

salt- to taste
green chilies-5
garlic pods-2
curry leaves-10-15
coriander seeds-1 tbs
cumin seeds-1 tsp
chopped onions-2 tbs
powdered coconut-2tbs
cinnamom-1 stick

for tempering...

oil-1/2 cup
mustard seeds-1/2 tsp
cumin seeds-1/2 tsp
fenugreek seeds-1/4 tsp
curry leaves-10

for garnishing....

coconut powder-2 tbs, dry roasted
poppy seeds-1 tbs, dry roasted
cilantro-a few leaves

Method: Dry roast the garbanzo flour, stirring quickly, until it turns slightly brown and gives out a nice aroma and set aside to cool. Roast the ingredients listed under "to be ground" and grind to a fine paste and set aside.

Heat oil in a pot and add the ingredients listed under "for tempering" and let them crackle. Then, put in the ground ingredients and stirr and let cook for a brief minute. Add one cup of water and let it come to a boil. Meanwhile, pour one cup of water into the cooled garbanzo flour and whisk it gently to make a pasty consistency and make sure there are no more lumps. When the water is boiling, quickly add the garbanzo paste to the pot and mix quickly with a wooden spoon. It will immediately turn into one thick mass. Reduce the heat to the lowest and cover with a lid. Turn off the stove after five minutes and add the lemon juice and mix one more time so that the juice gets incorporated into the mixture. Grease a plate and pour out the gooey, sticky, stuff! Flatten it out into a round disc shape  with a spatula  to a 1 1/2 inch thickness and garnish with the roasted coconut powder, poppy seeds and the cilantro leaves.  Cut it into any desired shapes and serve hot. Enjoy!
