Upma or Namkeen Sooji

My kids love to eat this for breakfast on weekends. If you roast the semolina, chop the onions and cilantro and boil water beforehand, it gets cooked in less than a minute. Here's what we are gonna need..,

Ingredients :

Sooji (Semolina)- 1 cup
salt-to taste
green chillies- 2, finely chopped
curry leaves-6-8 
onion- 2 tbs, finely chopped
urad daal-1 tsp
mustard seeds- 1 tsp
cumin seeds-1 tsp
cilantro-2 tbs
oil-2 tbs
water- 2cups

Method :

Dry roast semolina and boil water and set aside. Heat oil in a pot and add mustard seeds, cumin seeds and let them pop. Put the onions and saute until translucent. Add the urad daal, and stir until its color changes. Put the curry leaves followed by the boiling water. Put salt, and cilantro into the pot and pour the semolina with one hand and stir quickly in circles with the other hand carefully, as it ends up splashing hot, boiling goo everywhere. Immediately cover with a lid and reduce the flame. In about a minute, turn off the stove and serve hot. Enjoy!
