Soy Chunk Masala

Bismillahir Rahmanir Raheem.

Meaty chunks, full of protein, without the fat? Yep that's what soy chunks taste like, cooked with similar ingredients used to cook meat. A great alternative for those on restricted diet to control cholestrol or reduce weight. This is what we are gonna need to cook this great curry!

Soy chunks-2 cups
salt- to taste
tomatoes-2 medium
ginger-garlic paste-1 tsp
onion-1/2 fine sliced
oil-2-3 tbs
turmeric powder- 1 tsp
red chilli powder- 11/2 tsp 
water- one pot full to soak soy chunks
garam masala 11/2 tsp
cilantro-1 tbs,chopped

Method: Bring a pot full of water to boil and turn off the stove. Add a tsp of salt and throw the soy chunks in there and let them sit in there for five minutes. Then use a colander to drain the water and set them aside.Dry roast almonds and grind them to a fine powder in a nut grinder.Blend the tomatoes,almond powder, garam masala, salt, turmeric powder,red chilli pepper,  ginger-garlic paste, to a fine paste. Heat oil in a pot and saute the onions until golden brown and add the ground mixture  and keep stirring until oil seperates. At  this point, add the soy chunks and add water to get desired consistency. Let it cook on high heat for five minutes and lower the heat and cook for another two minutes and turn off the stove. Transfer to a serving dish and garnish with some chopped cilantro. Enjoy!
