Shrimp Biryani

This recipe is an adapted version from www.vahrehvah.com. I have to tell you, it turned out  a 100% right! The texture of the rice was perfect, shrimp softest and not chewy and the  flavors  were awesome. Anybody who knows the basic Indian Spces and has them in their kitchen can cook this in less than 45 minutes bi-iznillah:)

Ingredients:

To marinate the shrimp..

Shrimp: 40, (cooked, tail-off)
Salt-to taste
ginger-garlic paste-1 tbs
turmeric powder-1 tsp
red pepper powder- 1 1/2 tsp
coriander powder- 1 tsp

to make the gravy.,

Oil- 2 -3 tbs
yogurt- 1 cup, beaten
cilantro- 1/2 cup, chopped
mint leaves- 1/4 cup
green pepper- cut into small pieces
onions- two large, finely sliced and fried till golden brown


for the rice.,

Rice-4-5 cups, soaked for 30 min before cooking
water- enough to boil the rice
cardamom- 6-8 pods
cinnamom- 4-5 sticks
cloves- 4-5
mace- a pinch
caraway seeds- 1/2 tsp

Milk-1/2 cup
Saffron strands- 1/2 tsp

Boil the milk with the saffrn strands and set aside.

Method: Marinate shrimp in the ingredients mentioned for marination for twenty minutes. Heat oil in a pot and fry onions till golden brown. Remove from the oil and set aside.  Put the shrimp into the pot and fry till all the moisture evaportes and remove from the pot.Add the yogurt to the oil and stir  and add the cilantro, mint, green chillies, and then  put half of the fried onions and cook for a minute or two. Add the shrimp and turn off the stove.

In another pot, heat water and throw in the cloves, cinnamon, carawaay seeds, cardamom, mace and salt and set it to boil. Once the water starts to boil, add the soaked rice and cook until 90% done. Drain all the water using a colander and pour the rice over the shrimp gravy. Pour the milk with saffron over the rice. Also put the  remaining friesd onions on top of the rice and seal the mouth of the pot with an aluminum foil and secure it with a lid. Cook on high heat for three minutes and on med-low heat for another 6-7 minutes and turn the stove off.  When serving, scoop a spoonful of the shrimp from the bottom along with the rice from the top layers and serve. Enjoy!
